This month's recipes are made by the winners of our Nutrition Month recipe competition! Congratulations! Recipe #1 Spinach and bacon omelette by Emelia Dermott Ingredients: 1 tbs. olive oil 4 strips of bacon chopped 8 cherry tomatoes 2 handfuls of spinach 4 eggs Pinch of salt and pepper Directions: 1. Chop bacon, spinach, and cherry tomatoes 2. Add chopped bacon to a heated pan and cook until golden on the edges, drain the excess fat and set cooked bacon aside 3. Add olive oil to pan 4. Whisk together tomatoes, spinach, cooked bacon, and eggs adding to heated pan over medium low heat 5. Cover the pan and let cook for about 6 mins or until desired cook 6. Add salt to taste Recipe #2 Breakfast Enchiladas by Laurel Dix (RDN, LD) Ingredients: 8 large eggs 1/4 cup low-fat milk 1 Tbsp olive oil 1 onion, chopped garlic, minced 1 lb 99% lean turkey 2 cups spinach 1 cup sliced cherry tomatoes 1 1/2 cups black beans 1/2 cup enchilada sauce 1/2 cup reduced fat shredded Mexican cheese Toppings: cilantro, avocado, salsa Directions: 1. Preheat oven to 350. Whisk together eggs and milk until froth. Season with pepper. 2. Heat a skillet over medium heat. Add 1/4 cup of egg mixture and swirl pan. Cover with lid and cook for 3-5 minutes until the middle of the eggs are set. Remove from heat and repeat, making about 6 egg "tortillas." 3. Make filling: Add oil to a skillet over medium heat. Cook onions and garlic until onions appear translucent. Add turkey and cook until fully cooked. Add spinach, beans, tomatoes and stir until spinach has wilted. 4. Spread a thin layer of enchilada sauce into a baking pan. 5. On a cutting board, lay one egg tortilla. Top the centre with turkey & veggie filling. Roll tightly and place in the baking pan. 6. Repeat with the remaining tortillas. 7. Drizzle remaining enchilada sauce on top of tortillas and sprinkle with cheese. 8. Bake until cheese has melted, about 15 minutes. I love a hearty meal like this. Home cooked meal like this will always leave you satisfied to the bone. It's a breakfast to dinner recipe. One that you will wish that there will be leftovers for the next day so you can eat it again. And it will be guilt free even if you eat a big portion of it. The ingredients will fit the taste of anyone who wants to trim down, yet the taste of their food will not be compromised like the usual diet food.

Spinach and bacon are not the things that I would really think of combining. The taste that both bacon and spinach is really different from one another. To tell you the truth, I am not really a fan of vegetables, more so of spinach. However, I do love eating bacon and I am not really closed to new things. I think that I would probably try this original spinach and bacon recipe of yours, I hope that I made the right choice doing it.

I’m a native west coast clam digger ( Grays harbor Washington). We would get up before school and drive 15 minutes to the beach. Get our limits and go home. Always fried them . You can oven fry a lot healthier with panko coating or coconut flour. Use egg whites to moisten. Oven bake at 425 for 10 minutes. The veteran diggers and natives dig in the surf with shovels. That’s for the pro. I use a gun on dry sand. Less likely to break the shells which make it difficult to clean. Been doing it for 50 years I use a gun!!!!

Sad part is, the part of the body containg the poo sac is the most flavorful! We ust the neck and tough parts for chowder....the whits "soft" part is for other dishes (like pasta). Next time you come to the coast to clam...take that bit of extra ytme to carefully disect the colored material from the soft body. Great recipe though. THANKS!

I am not really a sandwich guy, so I have no frame of reference to give you. No offense, but I feel like a sandwich is just too bland. If you want to ask what snack, I want, then I would suggest that you go and try grilled bacon. Not only is bacon delicious, but it is also very easy to prepare. I feel like people are underestimating it too much, and I do not want it to be like that.

I also throw chicken breasts in the crockpot with chicken broth on high for 4 hours, then shred it up and save it or freeze it for later 🙂

Pasta with mushrooms is good energetic and flavorful dish. Pasta is very easy to cook in 10 mins and i also make it for my kids when i have no more time for cooking. This is nice spaghetti is also good in pasta and thanks for share with it.
